La cuarta entrega de #EmprendedoresenPandemia me sacó de lo habitual: la típica entrevista se transformó en una experiencia vívida y sensorial de cómo es ir a La Posta. En estas líneas intentaré dar fe de ese momento.

La Posta siempre te recibe para compartir un rato.

Eran la 1:00 cuando llegué a conversar a La Posta, tradicional punto de encuentro merlino: de él se ocupan Osvaldo Gutiérrez junto con Mirtha, su madre. Las mesas estaban tendidas, las parrillas bien prendidas y la Sierra de los Comechingones acompañaba. Para mitigar el sol de mediodía y entrar en tono, Osvaldo me sirvió un vermut: es la bienvenida para todo aquel que va a compartir un rato con ellos.

El arraigo con los suyos se advierte en el lenguaje, en la ambientación y en los sabores: Osvaldo sostuvo que buscan darle algo más «propio» a los vecinos, potenciando una identidad que en su núcleo permanece inalterada.

Cuando la charla se movió a la parrilla conversamos sobre el fuego. Para los Gutiérrez el fuego es el elemento de unión, la materia que los atraviesa y el recurso que nunca se acaba. La llama une a la familia y les permite trabajar codo a codo. Ahí Osvaldo confesó que se siente afortunado de trabajar con sus parientes: «Si a ellos les va bien a nosotros también, y toda mi energía va con ellos», expresó.

Hay cosas que nunca deben cambiar.

La conversación mutaba de tema y lugar, y este reportero calmaba el calor degustando un trago de la casa. «Aún no conozco hombre que haya muerto de amor, pero si de sed», rezaban las paredes del lugar. En la mesa no faltó la soda: «el sujeto silencioso» le dicen, porque sabe y escucha todo, pero nunca dice nada. El sifón siempre estuvo acompañando la jornada, como en cualquier casa de vecino.

Además, hablamos de la tradición. ¿Cómo mantenerla? Nuestro entrevistado resaltó que las nuevas generaciones otorgan un valor diferente: su arraigo al territorio es más placentero, porque aprendieron a disfrutar de las tierras en las que sus antepasados trabajaron. Los nuevos puntanos también se ligan con su lugar, y reflejan la identidad local en otros términos.

Al momento de dejar el lugar, satisfecho en las entrañas y en lo escuchado, entendí lo valioso de la jornada: mi mañana de trabajo cerró gloriosa, y me fui a casa contento de ser un merlino más. Para La Posta la comida siempre está a la orden, pero el verdadero producto es su gente. Y así fue.
