Así lo informó la CAME, que agregó que, en promedio, la participación del productor explicó el 33,6% de los precios de venta final.

Los consumidores pagaron por sus alimentos en góndola $3,1 por cada $1 que recibieron los productores, según mustra el Índice de Precios en Origen y Destino (IPOD) elaborado por el sector de Economías Regionales de la Confederación Argentina de la Mediana Empresa (CAME).

En promedio, la participación del productor explicó el 33,6% de los precios de venta final. La mayor participación la tuvieron los productores de pimiento (88,5%), debido a las altas temperaturas que quemaron las verduras de hoja verde y provocaron un salto en los precios de origen, mientras que la menor fue para los de mandarina (13,8%).

IPOD frutihortícola: del campo a la góndola, los precios de las 19 frutas y hortalizas que integran la canasta IPOD se multiplicaron por 3,9 veces en febrero, por lo que el consumidor pagó $3,9 por cada $1 que recibió el productor frutihortícola.

IPOD ganadero: por los 5 productos y subproductos ganaderos que componen la canasta IPOD, el consumidor abonó 2,9 veces más de lo que recibió el productor.

Los productos con mayores brechas mensuales fueron la mandarina (7,2 veces), la manzana roja (6,4), el limón (5,7), el ajo (5,3) y la acelga (5,1).

La mandarina fue el producto con mayor brecha entre el productor y el consumidor. Los precios sólo registraron variaciones en uno de los extremos de la cadena: el consumidor. Mientras que en origen no hubo incremento, este cítrico tuvo un aumento mensual en góndola de 34%.

El calor genera un daño irreversible en las frutas, por lo que la combinación entre sequía y altas temperaturas en zonas productoras (Entre Ríos) ha provocado una fuerte baja en la oferta.

Por su parte, los precios del limón, cítrico que también ha sufrido los embates de las inclemencias climáticas, registraron una suba del 17,1% en los precios al productor y 11% al consumidor.

Otra de las frutas que presentó una gran diferencia de precios del campo a la góndola, fue la manzana roja, con una suba mensual de 41% en origen -nueva época de cosecha y fijación de precios para 2023- y una baja de 9% en destino.

En relación a las hortalizas, el ajo registró una caída de 14,3% en los precios al productor -elevada oferta en febrero y marzo- y no mostró variaciones en góndola, mientras que el precio de la acelga aumentó un 6% en origen y un 43% en destino, debido a las recurrentes sequías y altas temperaturas que quemaron las verduras de hoja verde, especialmente en los cinturones verdes de La Plata y Santa Fe.

Entre los productos que presentaron menor diferencia entre el precio que recibió el productor y el que pagó el consumidor, se encuentran dos productos de origen animal y tres hortícolas.

En el caso del pimiento (1,1 veces), producto con la brecha más baja del mes, mientras los precios al productor aumentaron un 70,1%, al consumidor bajaron un 24%.

Los precios de la lechuga (1,4) y el brócoli (1,9), por su parte, registraron un aumento en origen de 93,5% y 76,1%, respectivamente -por altas temperaturas que quemaron las verduras de hoja verde-, en tanto en destino disminuyeron 2,5% en el primer caso, y aumentaron 12,5% en el segundo.

Con respecto a la baja brecha campo-góndola de los productos y subproductos ganaderos, los huevos (2) y el pollo (1,6), por lo general, tienen sistemas de producción integrados, lo que significa que todos los actores de sus respectivas cadenas de valor son parte del riesgo del negocio.

Mientras los huevos aumentaron 30,4% en origen y 16,5% en destino, los precios del pollo subieron 48,3% al productor y 7,5% al consumidores.

Debido al efecto del avance de la gripe aviar en la región, los precios comenzaron a dispararse antes de su llegada al país.

En estos momentos, y tras afectar efectivamente a la avicultura local, los productores muestran preocupación ante una posible crisis de producción que podrían acontecer si no se logra controlar la enfermedad.
